Over many years David has helped dozens of Australian hospitality providers with their beverage offers.

Recent projects include helping Adelaide’s iconic Chianti Restaurant winelist to return to (Gourmet Traveller) 3 Glass status, advising Australian restaurant Legend Stefano de Pieri on his famous Mildura venue Stefanos, with its adventurous, inclusive and eclectic list and supervising the short and sharp wine offers in the fascinating new venues of Chapley Group supermarkets at Frewville and Pasadena.

David understands all the elements of the environment an outlet operates in, and works with all the stakeholders to deliver a wine and drinks offer – whether monumental or tightly focused in scope – to resonate with the wide variations that are the customer.

Chianti is as enduring on the Adelaide wine scene as a good Barolo, delivering one of the more comprehensive Italian wine listings in the country. This year change has come to the list with categories now by grape variety, but the same depth of the very best of Italy still applies with the restaurant’s superb collection of aged Barbaresco and Barolo wines now given its own spot towards the list’s end. A smart collection of Aussie makers rounds out this enduring Italian love affair.
